- 2 patatas
- 1 cebolla
- 1 tomate rallado
- C/s pimentón dulce
- 1 vaso vino blanco
- C/s sal
- C/s agua

- Partir la cebolla en 8 cuartos, o si os gusta más en trozos grandes. Pelar y cortar las patatas en 4 cuartos, y si son pequeñas por la mitad solamente.

- Añadir aceite de oliva a una olla(el suficiente para que cubra el fondo) y poner a calentar. Cuando este caliente añadir las albóndigas y cocinar. Dar un par de vueltas hasta que están hechas, sacar y reservar en un plato aparte.
- Añadir las cebollas, el ajo partido por la mitad. No dejar de remover y cuando hayan pasado dos minutos a fuego fuerte añadir las patatas y cocinar unos 5 minutos todo junto.
- Añadir las albóndigas, dar un par de vueltas a todo para que se mezclen los sabores(hay que tener cuidado porque la harina que hemos puesto a las albóndigas tiende a irse al fondo de la olla y se nos puede pegar).
- Agregar un vaso de vino blanco y cocinar hasta que evapore el alcohol.
- Añadir una cucharadita de pimentón dulce, remover rápido y agregar el tomate rallado. Cocinar unos 5 minutos a fuego medio para que no evapore demasiado.
- Añadir agua a la olla sin que cubra todo, que se quede a un par de dedos de que esté todo cubierto.
- Subir el fuego al máximo unos 5 minutos a partir de que rompe el hervor. Y cocinar a fuego medio hasta que reduzca bastante el caldo.
- Cuando esté por la mitad del agua que hemos echado, dejar a fuego lento para que el caldito se espese y coja sabor.
- Debemos sazonar con sal y añadir una o dos cucharaditas de azúcar, según el gusto de cada uno, para quitar la acidez del vino y del tomate.
