- Seguidamente las freímos ligeramente , sin que se doren demasiado y las reservamos. En una cazuela u olla vertemos 2 cucharadas soperas de aceite de oliva virgen y pochamos la cebolla en juliana muy finita, junto con un ajito muy picado.
- Cuando esté transparente la cebolla añadimos a la olla el tomate picado y batido sin piel ni semillas , removemos y dejamos que se haga.
- En una sartén pequeña , mientras tanto, doramos una cucharada sopera de harina. Cuando el tomate esté listo, agregamos la harina tostada y a continuación las albóndigas y el caldo de pescado o el agua para cocerlas (que las cubra escasamente).
- Dejamos cocer durante 10 o 15 minutos (en olla expres) y ya cocidas las servimos acompañadas de lechuga o cualquier otra verdura .
