- 400 g carne molida

- Para las albóndigas:
Remoja el bolillo en la leche. - En un bowl sazona la carne con sal, pimienta, cebolla picada finamente, perejil, añade el bolillo remojado en leche y el huevo batido, mezcla muy bien. Puedes separar un poquito (tamaño de una nuez) y freírla, pruébala para rectificar el sazón, si no hace falta nada refrigera durante al menos media hora.
- Saca la carne del refrigerador, forma las albóndigas y fríelas en un poco de aceite de oliva, deben quedar doradas por ambos lados, se terminarán de cocer en la salsa.
- Pon a hervir agua, cuando esté hirviendo añade una cucharada de sal, mezcla y añade el espagueti, espera 10 a 15 minutos de acuerdo con las instrucciones del paquete, cuando esté cocido escúrrelo y añade una cucharadita de aceite de oliva para que no se pegue, puedes añadir también una cucharada de mantequilla.
- Para hacer la salsa, fríe en dos cucharaditas de aceite de oliva, el ajo, la cebolla finamente picada, cuando esté acitronada añade el jitomate en cubos, fríe por unos 5 minutos añade el puré y el agua, sazona con sal o consomé de pollo.
- Cuando la salsa esté hirviendo, añade las albóndigas y deja cocer a fuego medio/bajo por 20 minutos para que los sabores se integren y la carne se termine de cocer.
- En un plato coloca el espagueti, coloca las albóndigas y la salsa, añade queso parmesano o manchego. Listo!
